- 2 tbsp olive oil
- 1 sweet onion, thinly sliced
- 2 cloves garlic, minced
- 1 pound boneless skinless chicken breast, cut into thin strips
- 1 tbsp dried oregano
- 1/4 tbsp paprika
- Salt and freshly ground black pepper, to taste
- 2 bell peppers, thinly sliced
- 8 ounces mushrooms, sliced
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 cups milk
- 6 slices provolone cheese
- 4 hoagie rolls
Heat the olive oil in a large skillet over medium heat. Add the white onion and garlic, and sauté for 2 minutes. Add the chicken strips and season with oregano, paprika, salt, and black pepper. Cook until chicken is cooked through, about 5 minutes.
Add the green pepper (or bell pepper) and mushrooms to the pan. Cook for an additional 3 minutes, or until vegetables are tender.
Melt the butter in a separate pan over medium heat. Add the flour and whisk together until combined, about 1 minute. Slowly pour in the milk, whisking continuously until no lumps remain. Bring to a simmer and cook for 3-4 minutes, or until the sauce has thickened.
Add the cheese to the sauce and stir until melted. Pour over the chicken and vegetables, stirring to combine.
Toast the hoagie rolls on a griddle or in a skillet over medium heat for 1-2 minutes, or until lightly golden brown.
Divide the chicken mixture among the toasted rolls, and enjoy!
